In most cases gimbal motors have over current protection to prevent damage to the motors if something jams the gimbal resulting in a Gimbal Overload message. On the Mavic 2 Pro if all 3-motors are jammed it should also prompt to remove the gimbal cover. In any case no damage ‘should’ occur but best to play safe.

The gimbal guard is the one that stops it doing it calibration dance. So yes you are in the clear and can leave it on during flights. I've done that too many times with my Mavic Pro, turned it on without removing either. Then I freak out, turn it off and remove them.
